The perfect bite, 21 October 2011
I really love to cook. This is probably why I work out as hard as I do; although I enjoy the cooking and tasting part more than the actual eating, unless I’m serving it to friends who are just the most gracious tasters!
While concocting a special meat rub for Friday’s steak and eggs, I realized that when it comes to cooking, the most therapeutic part of it for me is seeing everything come together at the end. As a self-confessed foodie, I’ve also noticed that I don’t need to consume the whole dish…. that one forkful serving of all the dish’s components is enough to satiate my hunger for art in flavor. All I really need to determine if I like a dish or not is that one perfect bite.

I think we can’t go around measuring our goodness by what we don’t do - by what we deny ourselves, what we resist, and who we exclude. I think we’ve got to measure goodness by what we embrace, what we create, and who we include.
